The manufacturing process for green tea varies according to the country (in Japan, it is steamed with water vapour, in China with dry heat). Nevertheless, the important stages are quite similar in all the countries. After being picked, the leaves are put out to wither for a few hours to eliminate water, then roasted in order to block the enzymes responsible for oxidation. The leaves are then hot- or cold-rolled according to the country and the savoir-faire to shape the tea into pearls, eyebrows, needles, spirals, twists, etc., and to bring flavour to the leaves by breaking up the aromatic cells. Last but not least, a complete drying and sifting which helps to grade the leaves.
